If you are anything like me, you make a point to prepare pancakes at least once a week. I typically make pancakes on a weekend day. My favorite time is when all my family members are still asleep and they wake up to the smell of the pancakes cooking, and sometimes bacon as well, I have to admit. Cooking pancakes is almost the same as saying "I love you." When my children were little, I used to make different shapes of pancakes, put smiley faces on them, or even decorate them with icing and other sugary toppings. As we are all getting older, I am trying to come up with healthier ways to serve pancakes, including perhaps chia seeds, flaxseeds or even sometimes other type of flours then the traditional all-purpose white flour. It's also always a good idea to incorporate whatever fruits are in season and make it a special treat. In this book, we are proud to introduce you many different types of pancakes, some sweeter than others, some saltier than others. Each recipe is made so it's as fluffy and tasty as it possibly can and as easy and as accessible as we can propose to prepare them. Enjoy the pancakes and enjoy the experience of making them!
